a basic pancake recipe!
whisk together in a large bowl:
1 1/2 cups all purpose flour
3 tablespoons sugar (i usually use 1)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
whisk together in another bowl:
1 1/2 cups butter milk (or add a splash of white vinegar to regular milk)
3 tablespoons melted butter (you can use less)
2 large eggs
pour wet ingredients over dry ingredients. whisk together gently until combined.
pre-heat your girddle pan to a medium heat. spray with cooking oil. spoon about 1/3 cup of batter on the pan per pancake. let them cook until small bubbles dot the top and then flip. cook till lightly golden brown.
