Yes

Burgers are made of minced meat, steak is not. The centre of a steak has never been exposed to the bacteria and general shit you get in the air whereas the mince in a burger (and sausage etc) has. Therefore, you can eat a steak with the centre more or less raw and it wont do you any harm.

Eating a burger that is raw in the centre could give you lots of nasty tummy problems.

I was a butcher... I know these things.

It is safe to have it medium if you buy meat and mince it yourself I think. I've seen Ramsay serve burgers medium so I assume in some cases it is safe.

Aye, if its been minced recently, I wouldn't argue about it. I wouldn't think TIALs local pub has a mincer though (no mincing gags).
