I missed pancake day as I was poorly. I might make them anyway tho, if I can get my housemate to help. I'm not very good at flipping.

What do you use in the batter instead of milk and eggs?

You cant really flip scotch pancakes. But they taste much better so I can live with that.

The only difference between American pancakes and Scotch pancakes is how thick they are. Ours are thicker and they are a little crustier on the edges. Ours you can flip fairly easily (if you're cooking them properly) and yes, you would top ours with maple syrup and butter. You could also substitute milk with buttermilk but then I think those pancakes are called Canadian ones and are fluffier than ours but just as thick. Also, I would imagine our recipe comes (as Footsy has surmised) from Scotland as we had large numbers of Scots emigrate here in the 1700s and 1800s due to the Highland Clearances, etc.

Then it's the Canadian ones I had. They were gorgeous.

I had SUnday breakfast in The House of Pancakes last time I was in America. If I lived there any length of time I would be the size of Mexico.

Ah yes, The International House of Pancakes. Places like that are primary causes of America being the fattest nation in the world. The portions for one are enough to feed a family of four in a third world nation (i.e. Mexico) for a month.

Easily. I reckon I gained twelve pounds in one meal. I must never ever live in America.
