But the original (and supposedly best) Harry Ramsdens is at Guisley, near Bradford. Nowhere near Ayrshire.

i don't like chippys that keep the skin and bones in the cod. I find that when you order fish and chips when you are by the seaside.

I'm from Portsmouth (originally) and no-one there leaves bones or skin on the fish but they are so fresh they're delicious. you can even go down to the docks (down by the Camber just behind the Cathederal) and they'll take em off the boat, do the business and straight into the fryer for you.
