Viv is correct, isn't milk alkaline so it neutralises the acids in alcohol or something? I think that's why dairy products are also very good at soothing your mouth after a vindaloo. I love natural yogurt with curry.

That has nothing to do with pH. Milk contains casein, which covers the capsasin (sp?) from the spicy food.

I actually thought alcohol would make milk curdle if you mixed the two? It did with my anyways when I had a Baileys and then a Malibu and Coke.
