For me, the highlights are

Avatar (similar to Yudster, was quite blown away by this film - totally lived up to the hype)
The Godfather (great film, even better book)
Forgetting Sarah Marshall (Jason Segel, man crush)
Fight Club
Trainspotting
La Haine (haven't watched it in a while though)
Shawshank Redemption (obviously)
Xala

I'd maybe add Finding Nemo or The Incredibles as my favourite animated movies, but they're perhaps not as good as the above ones.

...and probably a few others I can't think of.

Bourne > Star Wars > James Bond >>>>>>>>>>>>>>>>>>>>>>>> Harry Potter.

Many will disagree with having Bourne above Star Wars, but I think they're are truly fantastic films in almost every aspect, storyline, acting and cinematography.

I hate to tell you this... But star trek is absolutely shite! The rest of your choices I can cope with

Wrath of Khan and The Voyage Home were brilliant. What was the Star Trek film which went back to how James T Kirk started his career with Starfleet? I really enjoyed that one. Fairly recent I think?

If you mean the J.J Abrams one with Simon Pegg it was just called 'Star Trek'.

That's the one. It was good, in spite of Simon Pegg.

Yudster has gone up in my books for solely having Muppets Christmas Carol on her list. Adore that film and like I said last Christmas, always a treat watching it on Christmas Eve and never watch it any other time of the year. Some people have films I would easily have in my favourites like Shawshank Redemption, The Green Mile and The Godfather but here are a few of my favourites:

City of God
Lord of the Rings trilogy
Back to the Future trilogy
The Goonies
Notting Hill (probably one of the only romcoms I can say I really like)
Hot Fuzz (watch this far too often for some reason but I love it especially the last big action sequence)
The Incredibles (favourite Pixar film but can easily put all of them on here except probably Finding Nemo & Cars)
Willy Wonka & The Chocolate Factory (one of my childhood favourites and still love it to this day)
Incepton (one of my favourites from recent years)
The Muppets Treasure Island
Boogie Nights
Inglorious Basterds (my favourite Taratino film having only seen it, Pulp Fiction and the Kill Bill volumes)

Best stop now since I can go on all day as well but those some of my old and new favourites.

I don't dislike Finding Nemo and Cars but they are my least favourite Pixar films (haven't seen Cars 2 yet) but don't love them like I do The Incredibles, Toy Story trilogy and Monsters Inc etc.
