I've been at River Cottage learning about pork all day. When I got home I found out I've got my desired 2:1 in English Literature.

I don't think I could be smiling more today. :D :D

A LOT. Basically we started in the morning with a whole side of pig and learnt how to cut it up into different joints (ham, loin, bacon, roasting joints etc). In the afternoon we were taught how to turn those things into sausages, bacon, salami, chorizo, parma ham etc. It's all surprisingly easy.

Oh - and also making me smile today is the phone call I had at home this morning during which the caller asked to speak to Cat. Upon hearing she's not there, the lady said "OK, are you her son?"

White Pudding, or Hogs Pudding as we call it down these parts is less strong and bloody.

The Butchers shop at Trago Mills in Liskeard is the best place to get it, in my opinion.

It is ok, as a pork based fried sausage goes.

Hog's Pudding is a type of sausage produced in Cornwall and Devon. Some versions of the recipe comprise pork meat and fat, suet, bread, and oatmeal or pearl barley formed into the shape of a large sausage and are very similar to a White pudding, whereas others versions of the recipe contain a high percentage of offal such as lung and liver and can more accurately be described as a sort of West Country haggis. It is a lot spicier than white pudding as it contains black pepper, cumin, basil and garlic

White pudding or oatmeal pudding is a meat dish popular in Scotland, Ireland,[1] Northumberland, Iceland (Lifrarpylsa), Nova Scotia, and Newfoundland. It is also quite popular in Devon and Cornwall, where it is known as Hog's pudding. It is very similar to black pudding, but does not include blood. Consequently, it consists of pork meat and fat, suet, bread, and oatmeal formed into the shape of a large sausage.[2] Earlier versions (pre-1990) often had brain matter (sheep) added as a binding agent.

In Scotland, white pudding can also be known as Mealy Pudding and does not always take the form of a sausage. It consists of suet, oatmeal, onions and spices. Some versions of Scottish white pudding are suitable for vegans, in that they contain no animal fat, vegetable fat being used instead.

The pudding may be cooked whole, or cut into slices and fried. It is an important feature of the traditional Irish breakfast. White pudding (as well as its black and red relatives) is also served battered at chip shops in Scotland as an alternative to fish (see fish and chips). When served accompanied by chips it is known as a White Pudding Supper.
