Bumheed, please keep it clean, you wont suffer knob cheese then. From my experience, it doesn't melt too well on toast anyway.

Best recipe I ever saw was from a book like "How to Boil an Egg - Cooking for students", about 10 years ago. It went something like:-


Baked Cheese
-----------------

Ingredients: Cheese

Method: Slice Cheese. Place one slice on other slice. Place under grill until golden-brown. Eat.

Slightly more usefully, don't choose Feta. You end up with a carbon slice, upon which is a perfectly cool slab of unmelted feta. If NASA ever run out of ceramic, they could spread it under the shuttle.

Yuck, far too mild.

I had some mature double Gloucester recently, which was quite tasty. Stilton is nice too, if you fancy something with a real kick!

Forgot to mention that you HAVE to have some brown sauce with cheese on toast...if you don't its just not right. Not a fan of worcester sauce on mine...yukky!
