Woo-ing is the procedure of making small gestures in order to gain somebody's affections. It's not really full-on hitting/flirting/chatting up. I've no idea what the modern phrase would be!

I always figured that it was flirting. When it's done right, flirting is not supposed to be full on, but small simple subtle gestures. I'm sure someone (mentioning no names) will soon post the entire wikipedia entry for flirting which we'll all skip.
