I believe the main reasons for restrictions on image dimensions are to do with stretching people's browser screens. That explains why it can be longer in a signature, because that appears under the post, whereas your avatar is to the left of your post and if it's unnecessarily large then the leftmost part of your post can be in the middle of the bloody screen. Which is annoying.
