but surely home made ones are the best?

Depends on the cook me thinks, but in most cases?

So, does it HAVE to be Kellogs, or have you tried other brands? Me, myself and I just love any brand!

Melt Chocolate. Add cornflakes.

Its almost as easy as making toast!

Gaspodes right tho, you cant go skimping on the quality.

No, if you just mix cornflakes in with melted chocolate you just get chocolate covered cornflakes. A proper cornflake cake has a sticky yet firm chocolate flavoured coating holding it all together. Its easy to make, but it has more than just chocolate in.

Large amounts of Cadbury dairy milk along with Kelloggs Cornflakes should be fine. Butter is also an optional I think. Any cornflakes will do that are halfway decent, just don't go getting No Frills or generic supermarket own brand.

ahh, see you are making a schoolboy error here and assuming that normal chocolate is the same as cooking chocolate. If you use normal cadburys, it will go all white and odd looking when it sets again.

Not always, chocolate is an odd beast, the white is called "blooming" and it is when chocolate is exposed to extremes of temperature, at 56c the chocolate is tempered perfectly, you can basically do anything with it at that temperature, and you can keep it the temperature for a long time, ie chocolate fountains, but is you heat it more and then set it the "seeding" of the chocolate happens irregularly and you get graining and blooming. Fudge is very similar in some ways, and needs to be grained with the addition of Fondant ( like you roll on top of your cake) if this is done correctly, and not to hot, then you get a smooth fudge, what you make at home is more grainy, for this very reason.

But you do agree, cornflake cakes are not just cornflakes stirred into melted chocolate? They aren't! The aren't!!!!!!

**bows to one with superior knowledge of such things**

Although, I doubt most of us would be sitting there with the thermometer out. I tend to judge how melted the chocolate is by looking at it!

The confectioner's skill is complex and mysterious. Even I have a sugar thermometer for doing such things at home. Best not to attempt making sweeties without one.

I agree with Footloose on the looking at it thing though, you can tell when it's right, with Fudge it's all about the colour, I could tell you within a half degree what the temperature is without adding a thermometer, and yes Yudyud is right on the butter, the fat stops the chocolate from being so brittle, and gives a better coating, but if you say bought 70% cocoa chocoate and added butter, it's really only like using Lidl cooking chocolate, it in the end becomes the same recipe. I like to add Sultanas to mine, this helps with your five a day also.

Nope, this is true - I alluded to other ingredients, and butter was definitely one of them, but foot loose was the one who said it.

Listen to the boboff though, he makes the best fudge in the world. True.

Two things - Dairy Milk is a ridiculous idea and if you make rice crispy cakes they should be made with Mars bars and a layer of chocolate spread across the top no less than 5mm thick.
