Who's 'we', and that a poor reason not to accept it as the first word; 'we' certainly heard it. Does that same theory apply in other situations? Say I shot someone and no-one saw it, did it really happen?

Jeff I have always thought that if I don't witness something then it has never happened. For example if a man in China lives his life and dies and I never hear about him then in my world he never existed.

In the context of the film and the ficticious world that is created in The Simpsons - we are merely bystanders to an event that is being witnessed by the rest of Maggies family. Homer says "Maggie is about to say her first word" to which she then replies "sequel". Therefore, in the world of The Simpsons, Maggies first word will always be "sequel" regardless what she may or may not have said before. At any point during the episode where she said "Daddy" were we told it was her first word? Can we therefore assume that she could be chattering quite happily while she is not on camera?

Ill assume you meant that if you shot someone and no-one else saw it? The difference is that in your scenario, there is plenty of evidence (in the real world) to back up the fact that someone has been shot - mainly the injured / dead person and bullet combo thing going on. Therefore, yes the person was shot however, you could claim that you did not shoot them. This happens frequently, its called "lying".

I like this pedantic thing, its fun - I can see why you do it.
