The only difference between American pancakes and Scotch pancakes is how thick they are. Ours are thicker and they are a little crustier on the edges. Ours you can flip fairly easily (if you're cooking them properly) and yes, you would top ours with maple syrup and butter. You could also substitute milk with buttermilk but then I think those pancakes are called Canadian ones and are fluffier than ours but just as thick. Also, I would imagine our recipe comes (as Footsy has surmised) from Scotland as we had large numbers of Scots emigrate here in the 1700s and 1800s due to the Highland Clearances, etc.
