i've been eating curry in tins for a while and got to thinking how to actually make one myself. I dont really want to read recipe books cos they always seem overly complicated. just trying to figure out like the bare minimum. then i can make it myself from then on.

i tried a chicken curry i found on the net. Was ok. except there's definately a typo in it. 5 tablespoons of tomato puree was way too much. it was more like tomato curry.

it was basically

chicken
spices that made curry paste
+
onions
tomatoes
chicken stock
tomato puree.
+natural yog to thicken

obviously chicken and spices are required (i dont like other meat)
do curries always have onions & stock and tomato in?

any thoughts?

normally i just use the jars of sauce from a shop and chuck it in the oven with some chicken and make rice like you i guess. they always seem nice enough to me so ive never tried to make one. might do now youve mentioned it though

Nah mate you want naan bread not poppadums.

I dont have a starter when I go for an indian now. I just have loads of the poppadums and onions stuff that they give you. I dont know if this is a brummy thing or a national thing

as for making curry. adam, you're going to need to experiment for a bit. i think onions are vital to a good curry. tomatoes, not as much. don't measure stuff- it's for the weak.

i'm a master chef.

generally you eat papadoms (the spelling at my indian) before even the starter as they usually are on the table when you get there.....

I'll take you for an Indian at my local Ruby, and you can try their rashmi kebabs. Best starter in the world!

I love the burn your mouth stuff, I remember we sat and made hot curries one time for the hell of it at work. It's fun as long as you have a glass of milk waiting to stop your mouth burning.

I like hot currys, they rule, i dont think ive ever had something that has been too hot for me, having said that, i prefer currys with a taste not just a pain.
